DHAL RECIPE FROM OUR BUDGET FRIENDLY MEAL SERIES
One of my favourite weeknight budget friendly meals is a pot of dahl! The flavours are so soothing in this easy yet satisfying dish. I love cooking with lentils as they are a great source of protein. This recipe makes two servings. I hope you enjoy!
Ingredients
1 cup lentils
1 onion
3 carrots
1 tomato
2 cups spinach
1 tsp ground cumin
1 tsp turmeric
1 tbsp curry powder
½ tsp ground ginger
You can also find pre made spice blends at the grocery store!
Instructions
In a pot add 1 cup of lentils and 3 cups of water. Bring to a boil, cover tightly, reduce heat and simmer until they are tender. They typically cook in 10-15 minutes. In a separate pan start sauteeing your onions. Allow them to cook for a few minutes, until translucent. Then add in your carrots and tomatoes. Next, stir in your spices. Once the lentils are cooked add them and the water they were cooking into your veggie base. Add in your spinach and combine. Allow the dahl to simmer for a few minutes so all of those delicious flavours can combine. Once done, serve and top with yogurt and herbs or enjoy plain. I like to have my dahl either with rice or even a slice of bread.
